Shirley Simmons’ Halloween Sloppy Joe’s

RICHMOND, Va (WTVR) - Local Richmond Cookbook Author Shirley Simmons has shared her easy and delicious recipes for more than twenty years with CBS 6 before retiring!  Today, she returned with a special Halloween recipe, Halloween Sloppy Joe’s.

Subject: Halloween Sloppy Joes

1 1/4   pound lean ground beef
1/2      cup onions, chopped
1          clove garlic, finely chopped
1          cup pure canned  pumpkin
1          8oz can tomato sauce
2          tablespoons brown sugar
2          tablespoons prepared mustard
1-2       teaspoons chili powder
1/4       teaspooon salt
8           hamburger buns
American and Mozzarella cheese slices
Sliced ripe olives

In a skillet brown and cook ground beef, onions and garlic over medium heat until beef is no longer pink, drain.  Stir in pumpkin, tomato sauce, brown sugar, mustard, chili powder and salt.    Bring to a boil.  Reduce heat and simmer uncovered for about 8 minutes.  While Cooking, cut pumpkins out of American cheese and ghost out of mozzarella cheese.   Cut extra mozzarella cheese into shapes like triangles, half circles,and etc., place on pumpkin shape cheese to make a face.
Spoon meat mixture onto buns and top with a bun and  top with a pumpkin or a ghost cut out for ghost place pieces of sliced olives to make eyes and mouth.    Yield 8 servings.
