BEST RECIPES OF 2013: Yummy Spiced French Toast

RICHMOND, Va (WTVR) - A great breakfast can jump start your day. Our good friend, Mary Rappoport from the Virginia Egg Council, shared her recipe for French Toast with fresh maple syrup apples that's so good, you might want to try it out this morning.

6 eggs

1½ cups milk

2 tablespoons sugar

2 tsp. vanilla extract

Spice mix (see below)*

1 tablespoon vegetable oil

10 slices (3/4” thick) French loaf or egg bread

In a large bowl, whisk together eggs, milk, sugar and vanilla.  Whisk in the spice mix until well blended.

Heat some of the oil in a large non-stick skillet over medium heat; brush pan to spread evenly.  Dip bread, a few slices at a time, in the egg mixture; place in skillet.

Cook about 2 minutes; flip and cook until golden brown, 1 to 2 minutes*.

Remove to a large plate cover with foil to keep warm; cook remaining slices, adding a bit of oil to skillet as necessary.

Serve with warm Maple Syrup Apples.                                   Makes 4 or 5 servings

*Be certain to cook long enough for all egg batter to be thoroughly cooked.  Longer cooking at a lower temperature will ensure that.

Maple Syrup Apples

1 tablespoon butter

4 cups peeled, sliced apples

½ cup maple syrup

Melt butter in a large non-stick skillet over medium heat; add apples; reduce heat to medium-low; cover and cook 3 minutes.  Stir in maple syrup.  Cook apples, stirring occasionally, until tender - about 2 minutes.

*Spice Mix

1½ tsp. ground cinnamon; ½ tsp. ground cardamom; ¼ tsp. ground nutmeg; ¼ tsp. ground ginger; 1/8 tsp. ground cloves
