  1. Local Caterer Herman Baskerville from ‘Big Herm’s Catering’ brings a taste from ‘South of The Border’ to Virginia This Morning’ when puts together his tasty and easy to make Southwestern Chicken Wraps.

Ingredients:
(4) 12 inch wraps
2 tbs olive oil
3 cups cooked and shredded chicken thigh meat
1/4 cup diced red onion
2 tbs diced pickled jalapeños
2 cups fresh shredded spinach
2 cups corn
1 can drained rinsed black beans
1/2 cup diced tomatoes
1 tsp cumin
1 tsp granulated garlic
Salt and pepper to taste
1 thinly sliced avacado
1 cup shredded Monterey Jack cheese
Directions:
Sauté red onions, corn and spinach and jalapeños in 1tbs olive oil, add beans, tomatoes, chicken and spices. Warm your tortillas in the microwave for 25 seconds.. Place 1/4 of the avacado and jack cheese on each tortilla, place 1/4 of your cooled filling on each tortilla, spread on one edge leaving a 2 inch border, fold in sides rolling up with seam side down, brush both sides of each wrap and place in a medium high pan, toast on both sides and enjoy.
