On Your Menu: Holiday Bread Pudding

Holiday Bread Pudding
 
 
4  cups half-and-half
1 ¼  cups granulated sugar
2  tablespoons grated orange peel
2  teaspoons vanilla
1  teaspoon ground cinnamon
5  eggs
1  loaf (12oz.) French bread cut into cubes (about 12 cups)
2  cups frozen cranberries, thawed OR dried cranberries (we used Craisins)
1 Tablespoon coarse sugar
4oz. white chocolate baking bars OR ½  cup white chocolate morsels

      (to be drizzled over the top of pudding, OR mixed into pudding)

Preheat oven to 325 degrees. 

In a large bowl, mix half and half, granulated sugar, orange peel, vanilla, cinnamon and eggs; whisk. Stir in bread cubes, cranberries and white chocolate morsels, if using this mix-in option.  Let stand for stand for 30 minutes to let liquid soak into bread cubes. 

Spray a 9” x 13” pan with a nonstick cooking spray.  Stir bread mixture and pour into baking dish.  Sprinkle with coarse sugar.  Bake uncovered for 1 hour or until deep brown and center is set. 

If using white chocolate baking bars, microwave on high 1 to 2 minutes and drizzle over bread pudding.  Serve warm.   Serves 12.         
 
To add a sparkle:  Soak sugar cubes(one for each person) in vanilla or lemon extract for a few seconds, drain and place on each serving of bread pudding. Light sugar cube and carefully serve, allowing
