RICHMOND, Va. (WTVR) – It’s the perfect dish to warm you up on a cool Fall or Winter night. Local Caterer Brittanny Anderson from Fence Walk Catering shared her step-by-step to making soup featuring a unique ingredient – celery root.
1 onion, diced
2 ribs celery, diced
2 celery root, peeled and sliced
3-4 cups chicken stock
1/2 cup cream
1 Tb butter
Saute onion and celery over medium low heat until translucent but not colored. Add celery root and chicken stock. Bring up to a boil and then lower to a simmer over medium low heat. Simmer until celery root is tender. Add cream and puree until smooth. Season with salt and pepper and garnish with diced apple, celery root, bacon, and reduced apple cider.
